Meals of the Week #2

Last Weeks Recap:
Homemade Chicken Fried Rice {FRIDAY}

1 Chicken Breast
2 TBSP Oil
3-1/2 C Cooked Rice, Chilled
2 TBSP Soy Sauce
1/4 C Green Onions, thinly sliced (We used Chives)
1 Egg, beaten
Heat a Non-Stick Skillet  or Wok. Add oil and heat over Medium Heat. Carefully add rice, stir in soy sauce and onions. Cook and stir for 5minutes. Add egg, until egg is cooked.

Ham Steak & Brown Sugar Apples (Paired with Mac n' Cheese and Green Beans) {MONDAY}
2 TBSP Butter
1/4 C Brown Sugar, packed
2  TBSP Spicy Brown Mustard
2 Apples, cored and sliced
1 LBS Ham Steak

Melt butter in a skillet over medium heat, blend in brown sugar and mustard. Stir in apples and simmer until apples are just tender. (5-8 minutes) Spoon out apple mixture; set aside. Place ham steak in skillet and top with apple mixture. Cook, covered, until ham is heated through. Serve. (5-10 minutes)

Wednesday: Crockpot Chicken Teriyaki over Noodles
Friday: Italian Sausages with Peppers & Onions
Saturday: Wedding ( Night Off)
